Minute Microwave Lasagna
This is a super quick low carb meal or snack that is delicious! It's like lasagna but without the carbs!

- 3 tbs pizza sauce (low sugar)
- 3 tbs cottage cheese (or 2 Tbsp of pesto)
- 1/3 cup fresh spinach
- 4 slices pepperoni
- 1/4 cup mozzarella cheese shredded
Layer in pizza sauce.
Top with pesto or cottage cheese.
Add spinach and pepperoni.
Top with cheese.
Microwave on high for one minute, let cool slightly and serve.
