Have you made spaghetti squash yet? If not you really need to try it. It’s really easy to make and will take the place of high carb spaghetti noodles. It’s a great substitute and tastes amazing with a low sugar pasta sauce. You can even make your own Homemade Pasta Sauce.

This spaghetti squash casserole is similar but it’s a casserole and the sausage and cheese adds lots of yummy flavor!

There are so many easy, tasty recipes you can fix with spaghetti squash! Its so easy to bake this to get the ‘spaghetti like’ texture of it! Just bake it for about 40 minutes and you can easily take out the insides to use in a casserole, with sauce or however you like! It’s a great way to substitute high carb pasta! Paired with a tasty sauce, you won’t even miss the high carb alternative! Creamy sauces also go great with it and turn spaghetti squash into the perfect keto meal.

Ingredients
  

  • 1 medium spaghetti squash halved lengthwise and seeds removed
  • 1 medium onion chopped
  • 2 medium plum tomatoes chopped
  • 1 cup cottage cheese
  • 1/2 cup mozzarella cheese shredded
  • 1/4 cup Parmesan cheese
  • 2 cloves garlic
  • 1/4 cup parsley finely chopped
  • 1 cup mushrooms chopped
  • 1 bag turkey sausage crumbles

    Do you have to use a cottage cheese or Greek yogurt? Couldn’t you eliminate this step or use toccata cheese?
