This hearty casserole is full of amazing, creamy flavour and delicious goodness! Our entire family enjoyed this casserole and the kids really liked it too! Makes a great meal and leftovers keep well for lunch the next day. That is if you have any left! This will disappear very quickly! Low carb, great for a ketogenic diet and diabetic friendly too!
Note: You can use either ground sausage or whole sausage for this.

Mushroom Chicken and Sausage Casserole
Ingredients
- 3-4 cups cooked chicken diced
- 1 pound sausage either ground or cut into chunks
- 2 stalks celery chopped fine
- 3/4 cup onion chopped
- 2 cups mushrooms chopped
- 1 medium red pepper chopped
- 8 ounces cream cheese softened
- 1 large cauliflower cooked well and drained
- 8 ounces cheddar cheese shredded
- 1/2 tsp Salt and pepper
- 1 tsp onion powder
- 1 tsp Garlic powder

Made this for dinner last night (minus the celery, peppers and cauliflower – I had some riced cauli, but it had gone bad before I could use it). I used a package of pre-grilled chicken strips, which made it very quick. We thought it was amazing! The flavors melded together beautifully and just a little bit was very filling! In fact, my hubby eats a lot and the two of us maybe ate only a third of it. Definitely a keeper, thank you!!
