This cauliflower soup is delicious! Very similar to potato soup, but low carb and I promise you won’t miss the potato. This is perfect for a low carb or ketogenic diet and so good in these cooler months ahead.
Cauliflower is one of those low carb foods that you can use in place of potatoes in almost any recipe. Its very versatile and works well in most dishes. I find most people that think they don’t like cauliflower actually do once they try a few really good recipes with cauliflower in them instead of it just cooked plain.
My kids have even started eating more cauliflower now that I have been cooking with it more often and they really like it! Some recipes they can’t even tell the difference!
This soup keeps well in the fridge for up to 4 days and you can freeze it as well. Or if you have a large family like I do it will disappear quickly- it’s that good!

Cauliflower Soup with Cheddar
Ingredients
- 2 Pints chicken or meat stock
- 1 Large cauliflower
- 7 Oz heavy cream
- 3.5 Oz cheddar cheese
- 2 Cloves garlic optional
- Pinch nutmeg
- pepper to taste
- salt to taste
Instructions
- Heat up the chicken stock.
- Chop up cauliflower and garlic into small bits.
- Add chopped cauliflower and garlic to stock.
- Simmer for 10-15 minutes, until cauliflower is soft.
- Add cheddar cheese and heavy cream.
- Season with salt, pepper and nutmeg to taste.
- Cool and blitz in a food processor.
