This is a dish your whole family will enjoy because it’s so creamy, cheesy and delicious! This meal takes no time to prepare and is an easy weekday meal if you have limited time! Some people aren’t sure about cooking spaghetti squash but it’s actually really easy to microwave! It takes no time at all and while it’s in the microwave you can prepare what’s in the rest of the recipe. How easy is that?

Spaghetti squash is one of those foods that I really didn’t eat a lot of before, but now that I follow a ketogenic lifestyle I really do like to enjoy it from time to time. You can use it in regular spaghetti and meatballs to replace the pasta and make a nice healthy meal. You won’t even miss the spaghetti noodles. There are so many foods like this that you can use to replace high carb foods that you love.

Cauliflower is another veggie I use quite frequently to replace things such as potatoes, rice, bread. etc. It works great and most of the time tastes the same or even better then the high carb alternative if you prepare it correctly. The trick is to use some rich tasting foods such as cream, cheese, things like that which give you the added fa but not the carbs!

Ingredients
  

  • 1 medium spaghetti squash
  • 3 tablespoons butter
  • 1 small yellow onion very thinly sliced
  • 1 teaspoon red pepper flakes
  • 1/4 teaspoon garlic salt
  • 1 tsp Salt and pepper to taste
  • 3/4 cup sour cream
  • 1 cup shredded cheddar cheese

    Which way should the squash be facing when you microwave it? Open side down or up?

      Face down! I put about an inch of water in the bottom, cover with cling wrap, face down, 10 mins in micro. You can bake in oven the same way without the cling or water. Sorry, I answered for her. It’s my favorite squash

    Made this – soooo good. Cooked squash 2 days ago, then reheated in microwave, added all together & baked. Easy. My husband ate it & he hates sour cream.

    You could place all ingrediants back into the empty squash shell and bake and serve from the shell voila no dirty dish to clean after
