Keto Bacon Cheeseburger Casserole

I love making casseroles for my family. They’re easy, filling and great for a crowd. This one was delicious, healthy and tastes just like a cheeseburger!

Cheeseburger Casserole

This is a really easy casserole to make that is keto approved and low carb. Its also diabetic friendly. Great if you are following a ketogenic lifestyle.

The kids will love this because it really tastes like a cheeseburger! I promise, you won’t even miss the bun. Feel free to add anything you like to this that you would normally add to your cheeseburgers, like pickles, mustard, mozza cheese etc.

My kids loved this and actually asked if they can eat it again the next day! Definitely a winner!

Cheeseburger Casserole

Keto Bacon Cheeseburger Casserole

Ingredients
  

  • 2 pounds ground beef
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 pound bacon cooked and chopped
  • 4 large eggs
  • 1 can tomato paste 6 ounces
  • 1/2 cup heavy cream
  • 12 ounces cheddar cheese grated and divided

      Call it what you want! But the meat is mixed in with ingredients and not formed into a loaf first, so it it a casserole.

    I make something like this, but layer cooked pasta noodles of any kind as well and finish it off with cheese. Mix the ground beef, onions, mushrooms with the Pasta sauce and make sure meat is cooked and then layer starting with pasta on the bottom. Almost like lasagne and I often put a layer of spinach in also.

      When I have made it for my son in the past, I have added a cup of mixed veggies into the mix so it was an all-in-one casserole.

    Very good, love the texture. Having just made this, I’m going to tweak the recipe just a bit next time. This casserole needs some zing, so I’ll use a little more seasoning, more cheese and keto ketchup in the sauce mixture rather than tomato paste. I’ll also add the cheese/bacon topping 1/2 way thru baking rather than at the beginning. I just served this up on shredded lettuce, topped with fresh tomatoes, onions(for the non-ketoists), avocados along with standard burger condiments. Thumbs up.

      Oh, and spray casserole dish with non-stick cooking spray. Makes cleaning up a lot easier.

    The whole family loved it… I didn’t have tomato paste so I cooked down a no sugar Tomato sauce and used that… delish just as written!!
