If you’re like me and follow a low carb diet and love cheese, then you’ll love my enchilada bake. It’s so flavorful and you spice it up, if you like you’re food spicy

I like to make this because it’s so easy and my whole family loves it!

Ingredients
  

Crust

  • 4 Oz cream cheese softened
  • 2 eggs
  • 1/2 Tsp taco seasoning
  • 8 Oz cheddar cheese shredded
  • 1/4 Oz tortilla chips finely crushed

Topping

  • 1 Lb ground beef
  • 1 Tbsp taco seasoning
  • 1 jar enchilada sauce 8.5oz
  • 8 Oz pepper jack cheese shredded

      It’s 1/4 oz for entire recipes. Leave them off if you don’t like them

      you could prob add almond flour, sounds like similar recipe to fat head pizza dough

    The first time I made this I used leftover roast beef which I shredded. Today, I made it with ground beef and added some canned green chilies which were leftover from taco night. Both versions were very good!

    Made this last night I added crushed hot pork rinds to the crust ( got soft) and a couple as topping for a crunch. Sooo good.

    Made this tonight and it was wonderful! Going to add something for a little heat in it next time or at least have some jalapenos in the house. wouldnt change a thing!

    I tried it but modified a little since I doubled it and failed to buy enough shredded cheese. I added ground pork rinds to the crust instead of tortilla chips. Pretty good – less carbs. Great recipe. Thank you!
