This is a great low carb recipe that tastes amazing! A good time to make this is when you find broccoli and cauliflower at great prices or from your garden!
This works best with fresh vegetables, but you can also use frozen as well if you are making this in the cooler months when fresh is harder to find or more expensive. It’s so quick and easy to make!
I think it’s great to take to a Christmas party if you want to take something healthy! With the holidays coming it’s a great switch up from all the sweets and high carb foods we are trying to avoid. Broccoli Cauliflower Toss
- 2 Cups broccoli cut into bite size pieces
- 2 Cups cauliflower cut into bite size pieces
- 3 hard boiled eggs chopped
- 1/2 Cup Mayonnaise
- 1/2 Cup green salad olives undrained
- 2 green onions sliced
- Toss together broccoli, cauliflower and eggs.
- Blend remaining ingredients and add to Broccoli mixture.
- Toss and Chill.
