Bacon Egg and Kale Cups

  • 12 slices bacon
  • 12 medium eggs
  • 1 bunch kale chopped


  • Preheat oven to 350 degrees.
  • Spray non-stick spray in 12 muffin tins.
  • Wrap each piece of bacon inside the sides of each muffin cup.
  • Fill each cup with a bit of kale and crack egg on top.
  • Use salt and pepper to your liking!
  • Bake for 20 minutes.
  • Use a knife to scoop them out of the tins.
