Minute Microwave Lasagna

This is a super quick low carb meal or snack that is delicious! It's like lasagna but without the carbs!

Ingredients
  

  • 3 tbs pizza sauce (low sugar)
  • 3 tbs cottage cheese (or 2 Tbsp of pesto)
  • 1/3 cup fresh spinach
  • 4 slices pepperoni
  • 1/4 cup mozzarella cheese shredded

Instructions
 

  • Layer in pizza sauce.
  • Top with pesto or cottage cheese.
  • Add spinach and pepperoni.
  • Top with cheese.
  • Microwave on high for one minute, let cool slightly and serve.
