Mini Meringues

  • 2 egg whites
  • 1/4 cup Swerve
  • 1/4 tsp baking powder


  • Preheat oven to 200f
  • Beat egg whites with mixer until soft peaks form.
  • Slowly add Swerve and baking powder. Mix until stiff peaks form.
  • Put in piping bag and pipe circles onto baking sheet covered with parchment paper.
  • Cook for 1h-1h30m or until golden brown.
