Squash and Ground Beef Mexican Casserole
- 1 lb ground beef or Italian sausage
- 1 tablespoon oil
- 3 medium Yellow Squash sliced
- 1 small onion sliced
- 1 clove garlic minced
- 1 can diced tomatoes undrained ( OR 1 fresh tomato, diced and 1/2 cup water)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teasoon Salt and pepper
- 1 cup cheddar cheese
