Looking for a delicious low carb soup on a cold evening? This zuppa tuscana soup is so yummy, it will instantly become one of your favorites!
This is one of my favourite recipes to make and this low carb version is the best! Usually zuppa tuscana soup is made with potatoes, but the potatoes can easily be switched out for cauliflower. I find tastes even better with cauliflower! Cauliflower is very versatile and can used in place of potatoes in almost any recipe to make the recipe low carb and keto friendly.
I made this with kale, but you can also use spinach if kale isn’t available. It’s sometimes harder to find this time of year. Feel free to use mild sausage if you think the spicy sausage might be too spicy for your taste, but if you like it a little spicy these ingredients give it a wonderful flavor!
There is nothing better then a big pot of soup cooking this time of year and it’s great idea for the holidays or when you have guests over. They’ll be very impressed by this recipe! It’s a hit every time I make it because its so yummy!

Zuppa Tuscana Soup
Ingredients
- 4 slices bacon cut up small
- 1 pound hot Italian sausage ground or links with casings removed
- 1 large yellow onion diced
- 4 cloves garlic minced
- 4 cups chicken broth
- 3 cups cauliflower cut up
- salt to taste
- pepper to taste
- 2 cups kale in bite size pieces
- 1 cup heavy cream or 14oz can evaporated milk
- Parmesan cheese grated, for serving

I’ve made this recipes since my husband doesn’t care for potatoes and the cauliflower is a great substitute! Can’t tell the difference!
