Minute microwave lasagna is a super quick, low carb meal/snack that is delicious! It’s like lasagna, but without the carbs! The best part is that it only takes a minute in the microwave!
If you are looking for something quick and easy for lunch this is a great choice! You can make this either in a mug or a small dish. You layer your favorite lasagna ingredients and microwave for 1 minute and presto a nice little lunch!
You can also make a few of these ahead of time and put them in the fridge for when you are ready to eat them. Just make sure to choose some low sugar sauce for this. So many sauces come loaded with sugar and can really put your carb count up! Feel free to add some spices to your sauce before microwaving and you can really jazz this up!
I love making this especially when I need a quick snack. It’s a great, ketogenic friendly meal!

Minute Microwave Lasagna
Ingredients
- 3 tbs pizza sauce (low sugar)
- 3 tbs cottage cheese (or 2 Tbsp of pesto)
- 1/3 cup fresh spinach
- 4 slices pepperoni
- 1/4 cup mozzarella cheese shredded
Instructions
- Layer in pizza sauce.
- Top with pesto or cottage cheese.
- Add spinach and pepperoni.
- Top with cheese.
- Microwave on high for one minute, let cool slightly and serve.
