Keto Grilled Cheese Made With 90 Second Bread

This is what was for lunch today! A delicious grilled cheese with the easiest keto bread ever! So simple and quick to make!

Best keto approved bread!

I decided to make some 90 second bread today because it’s super simple to make and tastes amazing! I wanted to make a yummy grilled cheese and I knew this keto approved bread would be perfect!

For the grilled cheese, I made my 90 second bread first and then cut it in half. I usually make it in a round dish, but today I make it in a sandwich shaped container so that it actually had the same shape as a regular piece of bread. If you are using a small container when you microwave your keto bread it turns out thick enough to cut in half with a bread knife to easily make two pieces.

I then spread some butter on each piece. I placed the first slice in the frying pan, butter side down. I placed some cheddar cheese on it and put the second piece on top, butter side up, for when I flip it. Cooked a couple of minutes on each side and done! Overall this made a nice quick lunch that was amazing and delicious!

Yesterday I made my 90 second bread into a sandwich. I toasted it as well, before making my sandwich. It turned out perfect!

You don’t have to toast your 90 second bread, you can eat it as is, out of the microwave. It’s all about personal preference. You can top it with anything you like that is keto approved. Makes great egg, bacon and cheese breakfast sandwiches as well! Use your imagination, there are so many options!

This bread is keto approved, low carb and diabetic friendly as well!

Ingredients
  

  • 3 tbsp almond flour
  • 1/2 tsp baking powder
  • 1 large egg
  • 1 1/2 tbs butter

Instructions
 

  • Melt butter in microwave. Add in remaining ingredients and microwave for 90 seconds.

      i would like to know the same question. im not a big fan of cooking in the micro. but im excited to try this recipe. Has anyone tried cooking it another way other than in the micro? And how did it turn out? Thanks

      I make something similar but with cream cheese also, I think the recipe is cream cheese pancakes, but I fried them up in a skillet and they worked like a charm!

    WHY can’t you just fry in a small frying pan like a crepe. and use it like a wrap?

    do u pat out the dough flat as you can get it in bowl & then flatten to sandwich bread after?

      No I didn’t pat it. When it was done I cut it in half so it would be thinner like sandwich bread

      You CAN use coconut flour! Took me awhile to figure it out, but just use 1 tbls of Coconut flour, instead of the 3 tbls of Almond flour. You can keep everything else the same. The texture will be the same, although the coconut flavor comes through more if you are eating it with something like just butter. However, Reb, sounds like you don’t have much of a choice. I hope that helps1

      Garlic Ghee, will help with the flavor. You can also add what ever seasoning you like, this is a base recipe for a lot of different recipes.

    Hiya. I tried making this–twice. I carefully followed the recipe. But all I taste is bitter, horrible baking powder. And on the second time around I used only half of the amount. Has anyone else had this issue?

      I’ve made this several times and I didn’t taste baking powder at all. Did you use a teaspoon? Or tablespoon?

    I play with flaxseed meal and almond flour. You can add herbs to the bread. The flaxseed turns up the fat and fiber with .2 (that’s two tenths) grams net carbs per tablespoon. Play with 1/2 – 1/2 flaxseed and almond flour.

    You have saved my Keto journey with this bread! I made it in a small rectangular glass dish. Cut it in half and used for open face egg salad sandwich. Now if I can figure out how to make it taste like cornbread for chili! LOL

    try double acting baking powder. I was having the same trouble with the baking power taste in a different recipe and I used that and it was good.

    Just fried it instead of cooking in the microwave. Basically cooked it up like a pancake with plenty of butter in the pan. Turned out great! Was craving a grilled cheese and soup today!

    I use a small square 1″hi x 4″ Corning ware dish to cook mine in the microwave. Then I take a knife around the edges, place a saucer on top and flip. I slice the bread horizontally then pop it in the toaster (for toast) or fry it.

    GRAINFREE CORNBREAD
    —————
    400* 12-15 min
    ~Large cast iron skillet
    ~1/4 c coconut oil heated in skillet…pour 1/2-3/4 of hot oil into MIXED batter
    *Batter*
    ~2 cups almond flour
    ~1/4 cup coconut flour
    ~1/2 tsp baking soda
    ~1 tsp baking powder
    ~1 tsp salt
    ~3 eggs
    3/4 buttermilk ( or milk)
    ~~~optional~~~
    for sweet cornbread
    1 tsp – 1/4 c of sugar/sweetener
    **Mix all ingredients adding hot grease at the end. Pour in hot skillet. Top with peppers and onions, and/or bacon if you like. Bake 400* 12-15 min or golden brown

    Coconut flour bread has a different recipe. It absorbs more liquid than almond flour.

    Made the bread,then made a grilled cheese……yuck yuck yuck……. I have regular sugar free bread that would only be 16 carbs for a grill cheese and I know it would taste good……..I’ll try this bread again for something else!

    I don`t use a microwave, either, for health reasons. I doubled this recipe and poured the batter into a silicone baking pan and put it in my round, electric oven. Didn’t know how long to cook it, but I put it on high and watched it turn brown after about five minutes. Had to cut it and turn it over to brown on high for another 3 minutes. Worked fine. It made a wonderful, crispy grilled cheese. And 2 more slices left for tomorrow. Thank you for a great, simple and fast recipe!

    This is absolutely delicious, and so easy and quick! I used a small round pyrex dish to cook in microwave. It pulls away from sides on its own during cooking, so was easy to remove with a spatula. I sliced it in half to make two slices, placed butter on each slice, and made grilled cheese. I will use this same method of toasting the bread and use it as a hamburger bun, So happy to finally find a keto bread I like that will be so versatile. I will out in toaster ti go with my eggs in the morning too! yay!!!! I can now have toast!!!!! Thank you for this recipe!

    I’ve also replaced one table spoon of the almond flour with tigernut flour as I’m trying to improve my microbiome and it worked like a charm. I like the taste of a little bit of rosemary and/or chives as well. I put the herbs in the butter when melting it to start the flavour infusion.
