Keto Chicken Cauliflower Fried Rice

This is a quick and easy dinner that your family will love! It doesn’t take long to make and is perfect for even a busy, weekday night meal. This recipe is made with cauliflower, so its so much healthier then rice. It is low carb, keto approved and diabetic friendly. This recipe makes an amazing meal and if you have leftovers it tastes even better the next day once the flavors mingle together. So yummy, it’s definitely a favorite at our house.

I love making a this for a healthy meal and the kids will take some the next day in their thermos to school if I make enough for leftovers. My kids love cauliflower and we cook with it quite often. Cauliflower was one of those foods I didn’t eat a lot before I started following a ketogenic lifestyle but we enjoy it all the time now! There are so many high carb recipes that can be substituted with cauliflower to make them low carb. And most of them you wouldn’t even know the difference!

There are a few options and alternatives for this recipe such as using shrimp, pork or beef for your protein. Some other vegetable options are, kale, celery, broccoli, corn, spinach or anything else you can think of. You could also add some extra spices if you like.

If yo have a large wok you can easily double this recipe to make enough for a crowd. I have a large family of six, so when I make this I usually make a lot! The kids always ask for seconds because it’s delicious! I hope you enjoy it as much as we did!

  • 1 pound chicken thighs cut up
  • 1 large head cauliflower minced
  • 1 large egg
  • 2 tablespoons Tablespoons cooking oil divided
  • 1/2 medium onion chopped
  • 2 cloves garlic minced
  • 1/2 cup carrots diced
  • 1/2 cup frozen peas
  • 2 tablespoons soy sauce
  • 1/2 teaspoon sesame oil
  • 1/2 teaspoon fresh cracked black pepper to taste
  • 2 stalks green onions diced

    Very good. I added more soy suace and also some freshly ground ginger. Kids and hubby loved it as well.
