I make these cauliflower mashed taters for my family quite often now and they actually prefer them over potatoes! They taste so good, you miss those high carb potatoes!

Keto Cauliflower Mashed Taters
- 1 head head cauliflower cut into pieces
- 1 clove garlic
- 4 oz cream cheese room temperature
- 3 tablespoons cream
- 1 1/2 teaspoons chicken bouillon
- 1/4 teaspoon black pepper
- 2 tablespoons Parmesan cheese
- In a medium pot, bring 4 cups water to a boil. Add 1 tsp salt, cauliflower and garlic clove. Boil till soft.
- Drain, and place in a blender. Add all other ingredients and blend till creamy. Serve immediately
