Italian Zucchini Boats

These are so simple to make and delicious! Perfect for the keto lifestyle, great for snack, especially this time of year!

I love these, especially this time of year when all the fresh veggies come out of the garden. The perfect summer snack for your keto lifestyle!

Italian Zucchini Boats

Ingredients
  

  • Zucchini sliced in half
  • olive oil
  • garlic minced
  • onion minced
  • tomatoes sliced
  • Italian shredded cheese
  • Italian seasoning

Instructions
 

  • Slice zucchini in half
  • Brush with olive oil
  • Sprinkle with minced garlic or garlic powder
  • Sprinkle with minced onion
  • Top with sliced tomatoes
  • Sprinkle with salt and pepper
  • Top with cheese
  • Sprinkle with Italian seasoning
  • Bake at 375 for 20 to 30 min

Notes

I didn't give measurements because everything is to your own tastes
