Have you tried Cauliflower rice yet? It’s a delicious, low carb, keto friendly alternative to rice that compliments almost any meal!
Cauliflower is a very versatile vegetable and I find myself using it often since I started following a ketogenic lifestyle. It’s a vegetable that makes a great replacement for a lot of foods like, pizza crust, bread, potatoes and rice! Cauliflower was something I rarely ate before Keto, and now we are eating it frequently and even my kids are loving it! Often times they prefer cauliflower to potatoes or other high carb foods. It stores well in the fridge and is a great replacement for any recipe that calls for rice.
When I make cauliflower rice and season it for the kids they don’t even notice a huge difference. It’s definitely a kid friendly recipe and gives them an extra veggie on their plate at meal time.
The directions below are for cooking in a skillet but you can also boil or microwave if you prefer. The texture of your rice in the end will be a little different so experiment and see which way you like the best. It’s also great to use for stir fries if you want to add some veggies and meat to your dish and of course any seasonings you like.
Cauliflower rice is easy to make and with some seasoning in it you won’t even miss high carb rice! This low carb alternative won’t leave you feeling bloated like rice sometimes does. I actually find that since starting my ketogenic lifestyle and drinking Keto/os I feel so much healthier! If you haven’t gone keto yet, you are missing out on a lot of health benefits!
