This is an easy salad to prepare that tastes amazing and is low carb.

Balsamic Cucumber Salad
- 1 large Cucumber
- 1/2 cup Grape or Cherry Tomatoes
- 1/4 cup Olives optional
- 1/2 small white onion
- 1/4 cup Red Wine or Olive Oil Vinaigrette optional
- Slice the cucumber in to rounds and cut each round in to quarters.
- Slice your tomatoes and olives in half. Chop your onion and add all to a large bowl.
- Toss with the vinaigrette of your choice and chill until serving.
