Cauliflower Soup with Cheddar

Ingredients
  

  • 2 Pints chicken or meat stock
  • 1 Large cauliflower
  • 7 Oz heavy cream
  • 3.5 Oz cheddar cheese
  • 2 Cloves garlic optional
  • Pinch nutmeg
  • pepper to taste
  • salt to taste

Instructions
 

  • Heat up the chicken stock.
  • Chop up cauliflower and garlic into small bits.
  • Add chopped cauliflower and garlic to stock.
  • Simmer for 10-15 minutes, until cauliflower is soft.
  • Add cheddar cheese and heavy cream.
  • Season with salt, pepper and nutmeg to taste.
  • Cool and blitz in a food processor.
