    Ingredients
    • 1medium spaghetti squashhalved lengthwise and seeds removed
    • 1medium onionchopped
    • 2medium plum tomatoeschopped
    • 1cup cottage cheese
    • 1/2cup mozzarella cheeseshredded
    • 1/4cup Parmesan cheese
    • 2cloves garlic
    • 1/4cup parsleyfinely chopped
    • 1cup mushroomschopped
    • 1bag turkey sausage crumbles
    Instructions
    1. Preheat oven 400 and grease a 13 x 9 pan.
    2. Place squash cut side down on pan and bake for 40 minutes or until tender.
    3. Once cooked take a fork and scrape squash strands into a large bowl.
    4. Saut̩ onion in olive oil for 3 Р4 minutes.
    5. Add tomato’s and mushrooms and cook 4 – 5 minutes.
    6. Add turkey sausage crumbles and cook 3 minutes or until mixture is dry.
    7. Add cottage cheese, mozzarella, parsley and onion mixture to the bowl with the squash. Stir to mix.
    8. Put mixture into squash shells and bake 40 – 50 minutes or until heated through.
    9. Sprinkle with Parmesan cheese and bake until melted.
