Slice zucchini in half length wise. Scoop out the pulp and chop it up. Set it aside. Put zucchini shells in oven for 10 – 12 min.
Stuffing – sauté onion in 1 tbs. olive oil for 2 – 3 min. Add mushrooms and sauté for another 5 min. Add chopped zucchini and tomatoes and sauté for 5 min. Add turkey sausage crumbles and sauté for another 3 min. Remove from heat and stir in cheese.
Fill zucchini with stuffing and place back in oven for 15-20 minutes.
